Ingredients for the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Drink (makes 850ml, enough for 10)

150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

To prepare the Citrus Syrup: Combine the listed items inside a pan, bring to a gentle boil, mixing to dissolve. After that, remove from the heat and leave to reach room temperature fully. Transfer to a sterilised bottle, close it keeping it in the fridge, where it will keep for about four weeks.

To make Premix: Mix the specified spirits and syrup into one big jug, let it rest for 60 minutes, then filter it preferably using muslin, making it perfectly clear.

To serve: Pour 85ml of your batch mix to a cocktail shaker containing ice, gently stirring lightly for about 60 seconds until cold. Filter into an frosted cocktail glass or equivalent, decorate with the cranberries and complete it using a brief mist of the essential oil above the glass.
